About Morettino Lab
Morettino Lab brings Palermo’s long roasting tradition into a modern waterfront setting at the Molo Trapezoidale. This specialty coffee shop and micro-roastery combines freshly roasted coffees with a slower, more open approach to coffee culture. The Giesen roaster works behind the bar, while Modbar equipment supports espresso and filter preparations including V60, Chemex, French Press and AeroPress.
Single origins and blends are selected from coffee-producing regions including Ethiopia, Brazil, Peru and Central America, with profiles developed to highlight the character of each origin. The setting matters too: the Lab looks across the marina, making it a distinctive place to explore specialty coffee in Palermo without separating coffee from food, brunch and Sicilian hospitality.
