About Santaromero Coffee
Santaromero Coffee is a Turin-based specialty coffee roastery built around one clear idea: Colombian coffee deserves to be understood from the farm to the cup. Founded by Gabriela Montañez and Francesco Anastasi, the project grew from their time studying gastronomic sciences in Pollenzo and their work with producers in Colombia.
They import green coffee directly and roast it in Turin, focusing on different regions, varieties and processing methods rather than treating Colombia as a single flavour profile. The small shop in Borgo Rossini also works as a tasting space, where filter coffee and guided comparisons bring the producer, origin and roasting process closer to the drinker.
