Founded in 2015 by Olga and Alex Sobal, the company began as a mobile coffee catering operation before bringing roasting in-house in 2020. Hedge HQ combines an on-site roastery, a specialty coffee bar and a showroom for coffee equipment company Sovda. Its coffees include rotating single origins from producing regions such as Kenya, Ethiopia, India, Bolivia and Mexico, alongside espresso blends. The roasting operation uses a Loring S35 Kestrel and precision sorting equipment. With espresso, pour-over coffee, a dedicated events space and a design built around natural materials, Hedge brings together specialty coffee production, hospitality and community.
